Thank you Devon Hall for sharing this amazing recipe from Greedy Gourmet !! It was simply divine, and so so easy!!
Creamy Prawn & Mango Curry
200 grams king prawns/shrimp cleaned and peeled
1 tbsp oil
1 tsp mild curry powder
100 ml light cream
1 ripe mango cubed
cilantro to garnish
1. place oil in a large fry pan
2. place the prawns in the pan and sprinkle with the curry powder
3. when the prawns are pink and almost cooked, add the cream and let it
bubble for a minute or two
4. when the sauce has thickened slightly add the mango stir thoroughly and serve right away.
5. serve on rice (I used Jasmine) and garish with chopped cilantro (I obviously forgot the cilantro!!)
The recipe says it serves 2, I doubled it, you may want to triple it, depending on how many you are feeding.
Delicious!! Will definitely be making this again!! Fredo said next time we should add some green beans!
