1 1/4 cups flour
1 cup rolled oats
1/3 packed brown sugar
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 cup buttermilk
1/3 cup veg. oil
2 tbsp molasses (or honey)
1 egg
1 tsp vanilla
1 1/2 cups fresh blueberries (or frozen)
Preheat oven to 375, in a large bowl combine flour, oats, brown sugar, cinnamon, baking powder and baking soda. In another bowl, whisk together buttermilk, oil, molasses (or honey) egg and vanilla; pour over dry ingredients, combine. Add blueberries and gently stir until mixed in.
Spoon into greased muffin tins (or muffin papers) filling 3/4 full. Bake for about 20 minutes or until tops are firm to touch. Makes 12 large muffins.
