Quinoa Burgers


I bought a BIG bag of quinoa from Costco.....a little too big if you ask me, but after finding this recipe, it is sure to be gone in a jiffy! These quinoa burgers were delicious!! And super easy to make!

Quinoa Burgers

2 rounded cups of cooked quinoa
(cook 1 cup uncooked quinoa with 2 cups water & 1/2 tsp salt)
3/4 cup shredded cheddar cheese
1/2 cup low fat cottage cheese
1 medium carrot, finely grated
3 eggs
3 tbsp flour
2 green onions, chopped, including the white parts
1/2 tsp sugar or Splenda
1/4 tsp black pepper
1/4 tsp ground cumin
1/8 tsp salt
1/8 tsp garlic powder
olive oil for frying

In a medium saucepan bring the 2 cups of water and 1/2 tsp salt to a boil over high heat. Add quinoa and reduce heat to low. Cover and cook for 18-20 minutes, or until the water is absorbed and the seeds are tender. Allow to cool for a few minutes.

In a large bowl, combine cooked quinoa, cheddar cheese, cottage cheese, carrot, eggs, flour, green onions, sugar or Splenda, pepper, cumin, salt and garlic powder. Heat a frying pan and a couple teaspoons of olive oil over medium-low heat. Mixture will be slightly sticky, so using a 1/4 cup measuring cup, drop mixture into heated pan and flatten slightly to resemble a patty. Fry until golden brown, about 4 minutes on each side. Makes approximately 10-12 burgers.

I ate mine with a dollop of hummus and some sliced avocado (I didn't have any buns). But I am sure they would be even more delicious with some mayo, lettuce, tomato and avocado in a nice Portuguese bun! I scarfed down three today after dance bootcamp!
