mini blueberry muffins


I had blueberries to use up, they were starting to get wrinkly.....so I made these :-)

Mini Blueberry Muffins

2/3 cup sugar
1/2 tsp salt
2 1/2 cups flour
1 tbsp baking powder
1 large egg
1/3 cup vegetable oil
1 1/4 cups milk
1 tsp vanilla
1 cup of fresh or frozen blueberries

Preheat oven to 400. Combine sugar, salt, flour and baking powder. In another bowl combine all the we ingredients, egg, oil, milk and vanilla. Make a well in the middle of the dry ingredients, pour in the wet, mix lightly, add blueberries. Combine until a soft batter forms. Fill your mini muffin tins with cute papers. Fill, and bake for about 12 minutes or until the tops are golden.

A perfect size for perfect little hands!
