cheese biscuits


These are a great addition to your soup, especially slathered in butter, when they are warm from the oven! Even with chili, to slop up the saucy goodness....

Cheese Biscuits

2 1/4 cup flour
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup butter (cold)
1 cup sharp cheddar cheese
1 cup milk
handful of finely chopped cilantro (if desired)
1 egg lightly beaten

Combine flour, sugar, baking powder and salt. Cube your cold butter into your flour mixture, to resemble course crumbs. Stir in cheese and cilantro. Pour milk over top and stir with a fork to make soft sticky ragged dough.

With a floured surface and floured hands knead your dough 10 times. Pat into a circle, about an 1" to an 1.5" thick, cut into rounds (cookie cutter or a drinking glass), repeat until all the dough is used. Place the rounds on a cookie sheet, brush the tops with your beaten egg.

Bake at 425 until golden, about 15 minutes.
